I platinum'd that game AND played the campaign three times over, but unless you're talking about the friendly neighborhood Spider-Man side activity stuff I'm not sure what you're talking about. Every activity in the game is on a checklist and once you've done it it's done (though you can turn some extra challenges on for some of the combat arenas for funsies).
And in any case, this sounds like the Gang Wars system in GTA: San Andreas, the Uruk refreshes in Middle-Earth: Shadow of Mordor, every aspect of every FromSoft game since Demon's Souls, the Blood Moon system of Breath of the Wild...
Obviously I loved the game and you didn't, but this complaint isn't unique to Spider-Man. For what it's worth, I say the exact same thing about Breath of the Wild - I really dislike that I can go on what feels like a grand adventure to discover a really cool weapon, only for it to break or the world to reset and place another one in the same spot - so, y'know, nothing works for everybody all the time!
