those sites always feel like its a race to the bottom but maybe they have improved.

I’m definitely considering trying them out while I’m job hunting.

I'm interested in doing voice overs but have never do so.

also want to find something related to cybersecurity that I can do outside of work.

Voiceover work sounds nice. When my youngest was acting he would get a nice amount calls to do voice work. You might want to sign on with a few talent agencies and see what it lands you.
