Wanna make some this weekend. I only have a gas grill but was told that I could still do it. My biggest question is do I use the jar rub or the big bottle of the liquid marinade? I'm guessing overnight in the fridge in ziploc bags would work? Yay, nay? Also do I need to cover in foil or can I just slow cook it open on the grill itself?

I like to score the chicken and loosen the meat before I apply the marinade. That way the marinade can get in there good. You definitely want it under the skin not just on the outside. Marinate it for 24 hours. I also use my gas grill. I just make sure its super hot before it goes down and always on the open flame. You gotta get that nice char on the meat.

Marinate that shit over night for sure. If you rocking a gas grill you'll still get something tasty. You can add smoke to it if you wrap some wood chips in foil or something.

I usually cook that shit slow and low with indirect heat, and maybe blast it at the end for a minute or two to get a crispier outside. Also if I'm feeling hype, i'll brush on more marinade every 15 minutes or so.

Most of the jerk i make is variations of that recipe. I've tried a bunch of other recipes but that one is the one I come back to.
