My mother uses evaporated milk to soften it up: cheese, macaroni and evaporated milk.



I prefer the evaporated milk version.

the maple syrup i get with, great way to add subtle sweetness and flavor to so many things and not just sweet things.

she doesnt use it in much that she cooks for me but cream of mushroom has always been a staple. she uses it in all sorts of sauces, broths, etc. she has used it in quiche so i imagine she could put it to work in mac n cheese. the few times she made that we got the richness mostly from the quantity/quality of cheese and maybe another ingredient (truffles, lobster, etc).

16 oz. bag/box of elbow macaroni
½ cup + 1 Tablespoon nutritional yeast
2 teaspoons of Spike seasoning
1 ½ cups soy milk
1 garlic clove
½ teaspoon sea salt
½ teaspoon paprika
¾ cup canola oil
Preheat the oven to 350 degrees.

Cook the pasta as directed. In a blender or food processor, blend the nutritional yeast, Spike seasoning, soy milk, garlic and paprika. Slowly pour the oil in the food processor while it is running. The mixture should be creamy, as this will be the “cheese” sauce.

Strain the pasta and run cold water over it. Be sure to shake all of the excess water out of the pasta. Put the pasta back in the pot and mix it with about 1 cup of the “cheese” sauce. Put the cheesy noodles in an oven casserole dish (I use a 7 ½ x 12 inch casserole dish). Pour the remaining cheese evenly over the noodles.

Sprinkle with paprika and cook in the oven for 25 minutes or until golden brown. Remove from oven and let stand for 30 minutes before serving.

never had spike seasoning and the ingredients look compelling. i'm definitely not getting "cheese" from your ingredient list

not knocking it at all btw. i want to try this. trying to be mostly vegetarian by the end of the year and need more recipes for the the rotation

Im vegetarian and tried it a few times. It was awful. Maybe I did it wrong.

But Mac and cheese ( next to pizza) is the main reason I'm not vegan. I love cheese

That ain't your life anymore. If you're truly vegan then let go of all associations with animal products, otherwise you're a poseur going through the motions but ain't really committed to that lifestyle.

EVERYONE thinks they have figured out the secret to making me love mac and cheese ('you gotta let it sit in the fridge overnight before baking it' 'you gotta use soy cheese' 'you gotta bake it in my granny's oven' 'you gotta put the right titty in it'). i have tried all of it and find it all equally gross.

(note: everyone in my near and extended family swears by my auntie's mac and cheese - i grew up in her house and she made that shit weekly. i find it horrifyingly awful.)

i do not like the combination of pasta, butter, milk and cheese. i don't care whether it's baked or boiled or grilled or fried. it's nasty. period.

that just means more for those of you who love that repulsive shit.

minus the gross part, obviously. but you find it equally gross cause no matter who claims they make the best, it almost always tastes like everybody else's. cracks me up.
