why folks act indignant when you state you want fresh bacon, not bacon thats been cooked en masse in the early morning and thrown in a container to just pick out and throw on plates when ordered

It should be chewy and crispy. You can do that if the slices are thick enough

Dude just dropped the slices into a deep fryer--and my patronage of their establishment ended.

I also watched them cook the "grilled chicken" I ordered in the same deep fryer, before it was finished on the grill.

if I am eating the bacon just as a side with eggs and potatoes then I want it slightly chewy. If it is in a sammich I want it crispy for texture.

The bacon is cooked fatty and chewy but about halfway through the day the kitchen will cook half of what's left over again for a crispier bacon. I think it's because lunch is way slower than dinner and the crispier stuff is for salads?

But fresh and chewy, definitely. That bin sits right on the expo line and when the bar is slow I'm snacking on so much bacon it's sickening.
