there are ppl all over the world who know how to make great Mexican food. those ppl have access to the necessary ingredients thanks to the wonders of air cargo transport.

5th Avenue in Sunset Park, Brooklyn is basically about 30 blocks of dope assed Mexican restaurants and bakeries. From what I've read, it's only been that way for about 15 years, or so.

Minnesota for 3 years probably hasn't really adjusted to American food culture yet and is still making the food from home. The Mexicans in CA and TX are largely 2/3/4th generation. Recipes get lost.

It's two taco trucks that are out til 2AM within a block of my house. I can drive a block over for a car wash, and pick up five tacos for $1 each while I wait.

And it's SO MANY levels to Mexican food, from the small grills on the corner, to the food truck, to the Tito's Tacos type spots, to the semi-upscale restaurants, to the healthy Mexican, to the "so authentic we don't even make Burritos or any Tex-Mex bullshit" spots, to the authentic "you BETTER walk in with a Mexican or else they gon look at you funny" spots in East L.A.

Also, it's just like most foreign foods...most Americans will never TRULY enjoy the most authentic versions of the food, because their taste buds are acclimated to what we've grown up on here. So people may claim to want authentic Mexican food, but then they'll ask for condiments or combos that are Americanized.

So yeah, you might see taco carts or trucks everywhere, but they aren't equally good.

I think states that have a wider variety of a certain type of ethnic restaurant also tend to have higher quality restaurants. In really competitive markets, competition weeds out the bad places, whereas if you're in a town or city with only a few options you can skate on mediocrity.

First, as already mentioned those two states have so many Mexican communities that they have so many more Mexican restaurants to try so you can always find a great spot.

Secondly, this being a capitalist society means that any average or below average Mexican restaurant isn't going to last for long if they don't improve their product. They will go out of business and will be replaced with another Mexican restaurant that will hopefully be better. No one spot, community or street has a monopoly on great Mexican food in San Diego, LA or San Antonio where as other cities might have one good stretch of Mexican restaurants to pick from.

I think this is a myth b/c i've had just as good if not sometimes better mexican food in good ol' LA/LA County than San Diego. LA has a huge population of Mexican immigrants so I don't get how the food is any less better just bc its a lil over 2 hours drive north of the border.

also when i lived in norcal, we had some OUTSTANDING authentic (or just more-authentic-like) mexican food.

I have to somewhat agree with u, not a knock on Mexican food in Mexico but moreso giving props to Mexican food I've had in the U.S. I found comparing best to best in both countries them to be equally great

The only places so far where I found the food to be way better in the native countries is Italy and France (for pastures to be more precise)

A good example of what I'm talking about happened on an episode of Candid Camera from the 90s. They visited Vermont and pretended that they were an upstart maple syrup company. CC secretly got some Vermont syrup and put fake labels on the bottles that read that the syrup was from California. When they did a taste test with the locals, all of them stated that the syrup was good but not as good as Vermont syrup. They looked real stupid once it was revealed that they were tasting Vermont maple syrup the whole time. It's that same snobby mentality that has cats thinking ONLY their area can make the best version of whatever dish/dishes they are known for.

is that the focus is on the meat itself, the rub and the cooking process, and not so much the sauce, like it is pretty much everywhere else. You should be able to eat brisket without having to add sauce and it should still be unbelievable, having to add sauce to good BBQ is like adding A1 to a high quality steak(again IMO).

I still like the other types of BBQ(KC,NC,Memphis) because someone who devotes their life to cooking meat well, is, well, going to do a pretty damn good job of it, and it's meat, and meat is the best, it's literally what we're made of.

Cali has a shitload of Mexican restaurants, but to say that Cali or any southwest or boarding states hold the crown may be stretching it a bit. I do believe that as many so called "good" restaurants there are in Cali, there is an equal amount, if not more overrated restaurants.

I don't care which state or territory has the best spots. I do care whether my stomach can handle the food at whatever spot I patronize. I would rather fuck with the "gringo" style Mexican spot than the so called "authentic" spots.

There are tons of Latinos there including Mexicans. It's about having a tradition and a culture, not a bunch of people of a certain race randomly there IMO. Like in Colombia they have Italians who run restaurants (some of them Italian, others not) but it's light years behind Argentina in that regard. Same sort of thing with Mexican food. I mean naturally a huge city like NYC, Philly, Phoenix, Miami, etc will have a few good places but for volume and consistency of quality, the old-line places still have an advantage.

First off, my sis and i grew up like best friends with a Mexican family who taught us REAL salsa, guac, etc...and they lived in NH

Second, there are plenty authentic Mexican-owned mom and pop restaurants anywhere within an hour from Boston (Salvadoran etc too, but Mexican too), probably further out as well. Plenty of variety and different styles... I'm like "why don't you go down to a few of these places and tell those Mexicans they don't make real Mexican food"

These ultra-white Cali snobs didn't even flinch, they just said "you don't get it"

the food from the northern states. People really don't know how big Mexico is. How diverse its population is. There languages unique to a single mountain range. You can't even imagine how the food varies. But everyone thinks it's all the same shit. Mofo's learned about soft shell tacos here only like ten years ago, while th majority of mexico would look at a hard shell like you were out of your mind.

Not that this is unique. Once it reaches america it gets a US 'patent as a regional cuisine determined how ever the fuck we like.
