I was in Ghana. I'm the one Black person who hates sweet potatoes, which we also call yams. People told me fufu was made form yams and I was like NOPE! Then I got back and realized what a terrible mistake I'd made.

These are the other types of yams:

http://en.wikipedia.org/wiki/Yam_(vegetable)

Not sure if that's different from cassava. Here's the Fufu wiki:

I think it's supposed to allow for the flavor of whatever stew or sauce you're eating it with to predominate. It's the starch that will get you full, and the sauce will provide the flavor.

In response to Reply # 45

You can make fufu (or pounded yam) by either adding water to a dried mix or from scratch by boiling yams and then pounding them until they're the consistency of thicker mashed potatoes.

And not sweet potatoe yams. White yams with that thick brown skin on them.

traditionally the "fufu" isnt seasoned at all, considering the dipping soup itelf is full of seasoning.http://streeteatstv.com/media/photologue/photos/Pounded-Yam-with-Egusi-Soup-2.jpg

but you can add sugar or salt if you were eating it independent of the soup. In this case then, you wouldnt be eating fufu, but slices of yams with a condiment, stew or omelette

I nervously took my mother for Senegalese in Harlem (Lenox Saphire)
She already had her nose wrinkled up at the mere suggestion of leaving the fresh Ogbono soup with stockfish to venture outside...haha...for gini?

And I was so relieved when she actually said "This is good. They tried".

If the food had sucked, it would have entered her lexicon of put downs to any suggestions made i.e. "You mean like that time you took us to eat I don't know what from Senegal?"

The funny thing was that, because none of them had no idea what they were, they didn't react negatively (for the most part).

If you've never smelled them being cooked you could easily not have hard biases against them.

yeah, "fufu" has incorrectly become the all emcompassing term for any starchy African dish..
but fufu itself is actually a unique Yoruba dish made from
corn flour, cooked & served on a palm leaf, if I remember right

Lol. The comments in here make me want to avoid the video.

One of my passions is introducing people(including black non-Africans) to African food with pop-up restaurants in different cities.
My Videos below. 250 people served so far and I have literally never had a bad reaction to West African cuisine. I get them to fill out anonymous feedback cards. For most its a great new discovery, for some its just alright or already familiar to some South American or West Indian dishes. Out right disgust? Never.
