Some big name games will likely use the hard drive in the future. It's already speculated that GTAIV will, and there have been some games that required it or run better with it.
You would need at least a memory card to save games, and those are proprietary (can't use standard flash cards like Nintendo and Sony) and $40. With the hard drive you can store music on your system to play in the background while you're gaming and download game demos, trailers, etc from the internet.
Trust, you want the hard drive. You don't necessarily need the space of the Elite's hard drive just for gaming, but that "20GB" hard drive the premium comes with is actually only around 13GB of space and demos can be as large as 1.5GBs, so if you plan on downloading a lot of them it's best to get an Elite (unless you feel like deleting stuff every time you get something new). If you ever think you might want to watch a movie from the Xbox Marketplace you should def get an elite because those are around 4GBs.
Because buying the bigger hard drive is $180 if you want to add more space later. Personally, I couldn't see spending that much money on a system and not getting the best hard drive, video output, etc. I could. I could see if it was the PS3 where every sku came with a hard drive and hdmi, and you can just swap out the hard drive with a generic and inexpensive one, but since you gotta go to MS for that stuff with 360, you're better of buying the system you won't need to add on to later.

By MGS do you mean Metal Gear Solid? If so, that's only on PS3 as of now.
