i salt it stick it in the oven to get to 10ยบ below desired temp then sear in a HOT cast iron pan with some butter and garlic on top.
that results in a tender juicy steak with flavor through out. only about 10 minutes of hands-on cook/prep time.
the one i had this weekend had a nice taste on the sear and was cooked medium rare as ordered but there was no seasoning/flavor to the inside. if they just added that butter and garlic it would have been just about right.
