"Logistics of Ditching Data Plans - Will this work?"

I'm thinking about going the route of downgrading to a dumb phone + using a wireless tablet (probably Nexus 7) for my internet needs. My question is, if we are with Verizon today and get our new dumb phones through them, can I use my old Droid X for wireless access until I buy a tablet? Or should I plan on having the tablet ready to go once we drop the data plan?

It'd be nice, though not necessary, to let the savings of ditching the data plan accrue and then buy the tablet. I just don't know if my Droid X becomes obsolete as soon as I switch devices. Thanks.
