I had 4 knee surgeries after a football injury so my knees are all but shot. BUT deadlifts have been great compared to the squats. I am about to add squats back, as well as weighted step ups, but deadlifts have been a lifesaver. I don't even do them on leg day, but on "core" day.
But in regards to "booty" the more weight you add to the bar (gradually) should end up retaining the shape you want.
