12769956, okps/okp parents, what's for dinner?
Posted by GirlChild, Wed Apr-01-15 09:05 PM
okp, i need some ideas for dinner. i am so sick of eating chicken!
i'm trying to eat healthy and avoid too many carbs/fat so i try to go with one protein and green veggies.

the problem is, this child is a picky ass eater and only wants to eat carbs. when i make something he just looks at it before even tasting it and says, "yuck!" he also limits how i cook because we love spicy food and this little bamma is too young to handle pepper.

i'm trying to introduce him to new flavors (curry, pasta sauce, etc) but it's tricky because this is the age where they are weird about textures.

he likes fruit, carrots, peanut butter, cheese and any carb you put in front of him. he's weird about meat but loves bacon and pork. i think even he is tired of chicken. oh and he won't even touch a bean or pea. when i try to sneak in the greens (other than kale) he picks it out or says yuk.

help! i'm about to just start drinking protein shakes because i'm sick of cooking and thinking about food.
12769962, ive been eating lots of tuna
Posted by NikaMandela, Wed Apr-01-15 09:17 PM
on some diet shit but ive found that the tuna in the packs tastes really good. i usually mix it with bbq sauce.

tonight i had spinach salad with tuna. i put onions and banana pepper in it.

what about a tuna salad sammich for him?
12769974, He hate seafood except tuna

12769989, hhmm... lentils
Posted by akon, Wed Apr-01-15 09:50 PM
here's a pretty awesome recipe

we call it rijla, in sudan, but there we make it with purslane- which is only available in the summer here and which tastes great,
here, substitute with spinach
i eat it with paratha, which you can find in most indian/ethnic food store freezers

fry onions and garlic. i like lots of onion, sprinkle with salt as this helps keep the cooking slow and is good for taste in general.
when they're done, add tomatoes (or pureed tomatoes),
(i also add tomato paste if just using tomatoes)
then add red lentils
cook until well done.
then add spinach (doesnt have to cook that long)

oh pre-soak the lentils in water for a couple of hours so they cook faster.

another great side dish is potatoes just boiled up. you make a tomatoe sauce using onions, garlic and tomato similar to above. add some peanut butter and ensure it's a smooth sauce. then mix in the cooked potatoes and add spinach.

i also cant eat raw veggies- i hate that most people try and serve me veggie sandwiches cause i dont eat meat (yuk).
i pretty much have to have my greens cooked

here's a good online recipebook
http://www.congocookbook.com

from the greens section i'd recommend
irio (i feel like you must have had this when in kenya)
greens in peanut sauce (although i cook the onions and tomatoes before adding the greens, also you dont have to boil the greens first)
mchuzi wa biringani (eggplant curry)<-- this is amazingly good, can leave out the chillies
fool medames (i love fava beans. instead of the eggs i would crumble feta cheese over it. you can also add tuna into the fool.

the recipes are overall very good

12770010, that's pretty similar to the way mauritians prepare their lentils
Posted by GirlChild, Wed Apr-01-15 10:39 PM
also, they use a pressure cooker so there's no need to soak. that shit done in like 20 mins.

but the boy won't eat any bean or pea
so making it is kind of a waste bc then i have to cook something separate for him

i'm trying to eliminate double duty
12770012, my son was SUPER picky like his will used to be crazy strong
Posted by bonitaapplebaum71481, Wed Apr-01-15 10:39 PM
I used to make posts about it because he'd lose weight and the doctors would say he's fine but then I'm crying at the dinner table mad nights cuz he would just refuse and I'm not about force feeding at all...

at one point we were giving him supplemental drinks to ensure he was getting everything he needed...

all that to say, this too will pass... honestly you just have to keep throwing stuff at him.

My son still hates eggs, doesn't like fish anymore but can be all about that chicken, beef, pork... it also helps when you encourage your child to help in small ways with dinner so that way they're more a part of the experience.

He's finally grown enough out of the phase that I could give him ground chicken stewed with ginger, pumpkin, chickpeas, and plantains with mushroom couscous tonight.

I hope your son gets out of this phase soon. I know it's maddening

12770016, i really just hate wasting food
Posted by GirlChild, Wed Apr-01-15 10:46 PM
most of the time i'm throwing away food because he refuses to eat it
i don't want to force feed him, but at times i worry about how little he's eating and will be happy if he just eats something.

he's suuuuuper picky! i've tried letting him come in the kitchen and prepare food so that he feels a vested interesting in eating it. but sometimes even then he doesn't want to do it and you have to tell him he has to try it. then he gobbles it up. he did that this weekend with a pork chop.
12770020, I had to trick my son in to eating different stuff simply by calling it
Posted by Fishgrease, Wed Apr-01-15 10:57 PM
a different variation of what he already likes...

for example CousCous became "baby rice"... once i told him that? He wants it for every meal.

Lamb? became baby steak.

salmon? big tuna.

He still wont eat green beans but will eat just about anything else that isnt deep fried and battered.
12770032, LOL
Posted by GirlChild, Wed Apr-01-15 11:22 PM
yeah we sometimes try this
for him its all texture
my husband flash fries various micro greens from our garden and calls them them "green chips." he already likes kale chips but just the word chips makes him go crazy.
12770033, im about to call snap peas American edamame on this kid

12770059, www.skinnytaste.com We've been cooking from that site exclusively

for over a year now.
A LOT of variety and easy to follow recipes with clear instructions and fairly simply ingredients. Also HEALTHY. And the majority of them get the nod from our little one.
Here's a sample of some hits we've had (no chicken too :) ):

THIS one will really set it off:
http://www.skinnytaste.com/2010/03/mexican-slow-cooked-pork-carnitas.html
If you put the pepper in, don't use the whole thing or it'll be kinda spicy...but we're finding that she can handle spices a little better now at 2+ years old... This one also lasts a couple of days for us

"Seasons may come and your luck just may run out, and all that you'll have is some memories..."

ALLLLLLL the time! You gotta try new things cuz they might taste goooood...gooooood!

but my little one isn't as picky as she used to be. The struggle now is getting her to eat salad, which is crazy because she's always been a fan on veggies--cooked or raw--but her and salad are not friends.

but she'll eat just about anything you put in front of her, sometimes a little coercion is needed.

She's not a fan of spicy either
12770128, what about a drumstick?
Posted by labcoat, Thu Apr-02-15 08:27 AM
my daughter did even realize drumsticks were chicken
until recently lol

umm how about chicken salad?
eggs

lasagna
spaghetti (with turkey ground)

honestly
we eat the same stuff
too
its annoying

luckily (ans its crazy that im saying this)
but she was allergic to wheat when she was one
so her diet used to only consist
of fruits, veggies and protein
(she was/is allergic to dairy still)

so she eats really healthy now
like now that her dairy allergy isnt as severe anymore
she just started eating cheese

OH WAIT
why dont you make your own pizza with him?
and let him add his own toppings
she loves that
12770360, ive done the pizza thing
Posted by GirlChild, Thu Apr-02-15 10:42 AM
i think the drumstick would freak him out
he's into animals and realizing he's actually eating one might make him cry, lol

12770400, you think that he will know?
Posted by labcoat, Thu Apr-02-15 11:11 AM
now i am ridiculous
but i didnt know chicken was really chicken
until i was 10

BUT
like i said
im ridiculous
lol
12770185, RE: okps/okp parents, what's for dinner?
Posted by Tiggerific, Thu Apr-02-15 09:02 AM
I made my hubby and I a Seafood soup (lobster, crab and shrimp). Zoe will be eating chicken nuggets and fries 😄.

I also am preparing tomorrow's lunch Pecan Stuffed Chicken Thighs and Grilled Asparagus.

Note: our big meal of the day is lunch, not dinner. We actually have protein shakes for dinner. Zoe is the only one in the house who eats regular.
12770396, i roasted my first chicken this week :-D
Posted by illegal, Thu Apr-02-15 11:09 AM
i felt like a chef an stuff
then the next day I chopped up the leftovers and made bbq sandwiches for dinner
oh yes.
12770401, I got a free turkey this week
Posted by GirlChild, Thu Apr-02-15 11:11 AM
As a promotion from my local grocery store
I have no idea what to do with this thing
12770724, Brine it, then roast it.
Posted by spades, Thu Apr-02-15 01:47 PM
after your done, either make turkey gumbo/turkey pot pie/or turkey noodle soup w/the carcass.

That's two weeks worth of food right there.
12770411, i'm making salmon cakes and mashed potatos..
Posted by ndibs, Thu Apr-02-15 11:16 AM
i think a young kid could handle that.
12770648, any luck with veggie lasagnas?
Posted by samsara, Thu Apr-02-15 01:13 PM
you can get a lot of variations out of that (white sauce/red sauce, squashes, green veg)
if you shred the veg into the lasagna the texture is less of an issue and it has the requisite pasta and cheese for picky eaters
and then you can get several meals out of a lasagna if they love it

same with mac and cheese (add veg, ham)

for spicy dishes, we usually just separate at some point in the cooking process and have a spicy/non-spicy version but i guess that can be a pain

will he eat crunchy things? like matchstick cut carrots, bell peppers, or cucumbers/pickles? sometimes kids will eat raw veg but not the cooked versions (or even cold, frozen vegs like mostly frozen green beans because it's crunchy and cold)

we're lucky - no picky eaters but i've heard horror stories - like a kid who only ate string cheese or only certain colored things so you're probably doing well and it's just a matter of trying again at different stages until they grow out of it.

12770838, whatever the kids will eat
Posted by lonesome_d, Thu Apr-02-15 02:46 PM
the Mrs. and I will somewhat frequently have our own thing - lately she's been on a juicing kick, so if either of us ha a big lunch we'll just have juice while the kids have their chicken nuggets or grilled cheese and tomato soup or whatever.

>the problem is, this child is a picky ass eater and only wants
>to eat carbs. when i make something he just looks at it before

One of the things my wife does really well is make things they like, but puree veggies into them. It usually works well, though there have been a few bombs. But yeah, she'll put pureed kale, spinach, mushrooms etc. into both the spaghetti sauce AND the meatballs.

>i'm trying to introduce him to new flavors (curry, pasta
>sauce, etc) but it's tricky because this is the age where they
>are weird about textures.

hmmm

>he likes fruit, carrots,

he's ahead of my 2 older kids, then... and they're ten and eight! Neither will willingly eat any fruit or vegetable with very limited exceptions. All the science says eat veggies in front of your kids, and they'll eat them.... grow veggies with your kids, and they'll eat them.... my kids are like the counterbalance to that.

My youngest is 4 though and doesn't have any problem with veggies. Weird.

> he's weird about meat but loves bacon
>and pork. i think even he is tired of chicken.

My oldest was so fussy with meat until he discovered he likes ketchup!

>help! i'm about to just start drinking protein shakes because
>i'm sick of cooking and thinking about food.

Couple relatively healthy things my uber-fussy kids have always eaten:
-Mild curries: masala and korma, especially
-tofu, both agedashi (Japanese flash fried) and chilled/marinated (only the 8 y.o. though, not the 10 y.o.)
-Salmon, esp. grilled with a honey mustard glaze
-candied carrots (note the 10 y.o. has abandoned these through sheer force of will; he actively liked them until about two years ago, and won't touch them any more. 8 y.o. still eats them.)
-Grilled meats: steak, leg of lamb, pork tender/loins, barbecued meats, sausage
-Scrambled eggs with cheese (has to be the right kind of cheese though! They like 'orange cheese sticks' with the egg rolled around it. Picky pains in the ass.)
-fried flounder or tilapia

Good luck
