raw organic chicken

bring to rapid boil

after 10mins put it on a lil light simmer for an hour or so

i baked the chicken in the oven so now i put it in the gumbo and let it cook for an hour

but sheeeeid...my daughter bounced to Arizona for xmas...and its just me here....fugg spendin all that cash...i made a big pot of chili sunday...and i been eating chilli, chilli dogs, nachos...etc....

but yeah SEAFOOD gumbo is expensive
this lil chicken and sausage stuff aint too bad
i wanted to make wifey some crab cakes so i called roses to see if they had blue points in
yup $15 a pound for lump meat
for shits and giggles i called Point Loma Seafoods in san diego...
$42.95 a fucking pound!!!

for crab meats yo!

man i made chilli last week
now THAT was an expensive pot cause all i had was some beef short ribs i needed to cookup
so i made beef short rib chilli

but i forgot it anyway when i went to the grocery store to buy the bell pepper

my wife eat that stuff and i was going to dip a lil out this pot to make her some "seafood" gumbo
but she got her soup coolers blowing on spoonfuls of this so she happy

Like what in it makes it that color? I always prefer the reddish looking ones aesthetically.

I dunno, gumbo is just meh to me but everyone else seems to just love it so much lol.

gumbo file is ground up sassafrass leaves
you put it in at the VERY end of cooking
like, after you turn the pot off
if you put it in too soon it becomes stringy

i got some in the cabinent and will just sprinkle it on like it is salt/pepper in each individual bowl

But since she loves cast iron (enameled or not) I'll accept her.

P.S. I only rock with three pans to cook with:

1. that huge 12 inch cast iron skillet you see me baking in. I'll flip it over and get it up to 500* to use it as a pizza stone.

2. the enameled Cuisinart dutch oven you see i'm making the gumbo in. Le Creuset supposedly is the best but I'm not spending $300 on a pot when a $40 version will do the same thing.

3. a copper Mauviel lil saute pan. thats my workhorse. i need a matching saucepan but I havent found one under $150 yet.


oh and i want a new chef's knife.
i've been hearing those Victronix are very good knives and are only like $40 on amazon

Yea I aint making gumbo.

Though im sure i could whip up a mean pot.
Besides, all the Viets in LA. Im sure theres a good Vietnamese Gumbo Recipe out there.


I can cook Asian food, but usually dont. Easy to cook--but the chopping and prep of things takes too long. When Im in Cali, I have my mom sous chef that stuff.
