12681696, Wait, why can't I get my maduros to be consistently sugary sweet?
Posted by deejboram, Sun Dec-21-14 10:02 AM
Like, sometimes they be ON POINT
all that soft buttery sugary goodness
And other times they come out dry, hard and more like tostones.

Tips?

Man, let me finish getting ready for church.

12681708, the darker the skin, the sweeter the maduro...so, close to black...i
Posted by R A i n, Sun Dec-21-14 10:23 AM
personally don't really like maduros but, i'll cook them.
12681712, Even still, sometimes the blackest ones be tostones like
Posted by deejboram, Sun Dec-21-14 10:37 AM
I know about hte dark skins from my fam perfecting banana bread back inna day

I still be at odds with getting these maduros right

I even went so low as buying the frozen goya jawns just to get through
So shameful
12681934, never had a problem as long as i was dealing with super ripe
Posted by ShawndmeSlanted, Sun Dec-21-14 05:54 PM
I had miscues early on trying to get ones that werent so black already
12681956, im dealing with super black almost spolied plantains
Posted by deejboram, Sun Dec-21-14 06:55 PM
im sayin
i know what very ripe bananas/plantains look like
im saying even if i start with very ripe ones my shit still come out a lil dry like tostones
it be pissing me off too because it fucks up my breakfast
i like to (be looking FORWARD TO) a nice set of buttery scrambled eggs and some nice sugary golden platanos and salty hickory smoked tocino
but the platanos be the big sugary let down
bacon be salty and on point as it needs to be

im asking here because i saw the goya joints in the freezer section last week and copped
threw them in a cast iron skillet in a lil butter and they warmed right up PERFECTLY
but i had a bit of guilt as i paid WAAAY too much for something as simple as platanos
that's like me buying a pound of plain white rice from the Whole Foods hot food bar.

12682162, obviously you don't if you still have this problem lol
Posted by BabySoulRebel, Mon Dec-22-14 09:32 AM
12682166, Baby i'm not lying. Serioso!
Posted by deejboram, Mon Dec-22-14 09:34 AM
i think like nbdisbss said maybe it is the non-NYC platanos i'm using creates this problem

I'm going to buy some today and let them ripen up and try again

i feel like such a failure
like all them okp who can't boil rice
who knew something so simple could take such science?
12682186, lmao at non-NYC platanos
Posted by BabySoulRebel, Mon Dec-22-14 10:01 AM
I've made perfect sugary platanos in PA and FL
you're not just looking for color, you're looking for texture as well
12682383, pa and florida are suburbs of nyc.

but frankly i see you regularly trying to legitimize yourself regarding other cultures
i'm telling you its not working

this isnt about my pride in my heritage(s)
this is about you fronting regularly
about shit you dont know and using it for some type of cultural cred
on these boards

on the one hand i'm glad you are seeking some sort of direction
but you are trying to do it from a false place of expertise
you can quit that
nobody is buying it
just tell folks you dont know how to make maduros

Life at ivy league schools?
Been there done that.

Traveling the world partying and having sex with random women?

I'll have to look into Titas
12681755, from a baking standpoint: are you using the same recipe every time?

12682010, Please tell me yall usin butter on your maduros.
Posted by Doronmonkflake, Sun Dec-21-14 09:40 PM
If you use oil at all, it becomes that flat potato starch taste.

But I put cinnamon and nutmeg with the butter, which is clearly a cheat but who cares?

12682027, That's all, really. I did get this crazy cinnamon butter
Posted by Doronmonkflake, Sun Dec-21-14 10:22 PM
At Denny's last time I went. It was on their holiday pancakes. I knew I had to use it on them platanos.

I felt like Scooby Doo eatin them things.
12682061, ever see those epicurean butters? maple one is fire. you can make it, too
Posted by ConcreteCharlie, Mon Dec-22-14 12:02 AM
they are expensive, usually i get them on sale $2 for 4 oz. but i think the regular price is 3.50 or 4 bucks.

you can make it at home with quality butter and real maple syrup for less.

there is this stuff called buffalo butter (from bufala, italy) that is delicious, though more for savory stuff than sweet.
12682066, The denny's thing turned out to be some sort of whip
Posted by Doronmonkflake, Mon Dec-22-14 12:19 AM
I don't think it was actual butter cause it evaporated in no time and I had to back it up with actual cinnamon and more butter. But it got the ball rollin.

I hated bananas my whole life, but these right here? Earthstopping.

Add some sugar to the platains and put aside in fridge

So sidenote: Ugh I can't stand you as a poster- it pains me to give you this info
12682047, I think platanos outside of NYC be funky....
Posted by ndibs, Sun Dec-21-14 11:18 PM
And the exact banana variety is inconsistent...

Will the same batch of bananas yield different results?
12682118, I think you might be on to something...
Posted by deejboram, Mon Dec-22-14 07:04 AM
I've NEVER made a bad batch of maduros in nyc
NEVER
caribbean neither
but everywhere else results be spotty
i buy the plantains from all types of stores too from WalMart up to Central Market (texas local version of Whole Foods)

but you're right some of these platains be lookin just a lil different from the nyc ones

i usually buy no more than two plantains at a time so i can't really call them "batches" but results are consistent if i bought a pair of them

>And the exact banana variety is inconsistent...
>
>Will the same batch of bananas yield different results?
12682172, Bet they're buying slower ripening more starchy
Posted by ndibs, Mon Dec-22-14 09:39 AM
Less sugary varieties bc they don't expect them to turn over as quick or just buying whatever they can get from whatever country.
12682193, they ripen faster on a bunch versus off
Posted by BabySoulRebel, Mon Dec-22-14 10:05 AM
12682420, you may be onto something because, there's definitely a difference...
Posted by R A i n, Mon Dec-22-14 01:11 PM
between the ones i've had in the dominican republic vs. here in nyc so i'm sure it probably depends on how they actually ripen wherever you are located.
