Like, sometimes they be ON POINT all that soft buttery sugary goodness And other times they come out dry, hard and more like tostones.
Tips?

im sayin i know what very ripe bananas/plantains look like im saying even if i start with very ripe ones my shit still come out a lil dry like tostones it be pissing me off too because it fucks up my breakfast i like to (be looking FORWARD TO) a nice set of buttery scrambled eggs and some nice sugary golden platanos and salty hickory smoked tocino but the platanos be the big sugary let down bacon be salty and on point as it needs to be
im asking here because i saw the goya joints in the freezer section last week and copped threw them in a cast iron skillet in a lil butter and they warmed right up PERFECTLY but i had a bit of guilt as i paid WAAAY too much for something as simple as platanos that's like me buying a pound of plain white rice from the Whole Foods hot food bar.

they are expensive, usually i get them on sale $2 for 4 oz. but i think the regular price is 3.50 or 4 bucks.
you can make it at home with quality butter and real maple syrup for less.
there is this stuff called buffalo butter (from bufala, italy) that is delicious, though more for savory stuff than sweet.

I don't think it was actual butter cause it evaporated in no time and I had to back it up with actual cinnamon and more butter. But it got the ball rollin.

I've NEVER made a bad batch of maduros in nyc NEVER caribbean neither but everywhere else results be spotty i buy the plantains from all types of stores too from WalMart up to Central Market (texas local version of Whole Foods)
but you're right some of these platains be lookin just a lil different from the nyc ones
i usually buy no more than two plantains at a time so i can't really call them "batches" but results are consistent if i bought a pair of them
