Grinder type is what matters:

- With a regular blade grinder, beans are chopped up leaving the ground beans at different sizes. Different sizes of ground beans can affect the taste.
- Blade grinders generate heat in the blades, which will affect the taste of the ground beans because it slightly heat the beans, releasing flavor early.

A burr grinder crushes beans rather evenly, without the heat generated by blade grinders.

In addition, with a burr grinder, you are better able to control the level of your grind (fine ground, medium ground, etc).
