Cut out tipping and the customer knows exactly how much he is going to be paying when he places an order. And more importantly, the employee knows exactly how much they will be paid at the end of the day.

Waiters/Waitress wages should not fluctuate based off the whims of their customers

How many times have you heard cheap idiots say, "I asked for sprite, not 7-Up...she's not getting a tip." Or blaming the waitress when it's clearly the chef's fault. Or not realizing that there's only 1-2 servers when it's 200 people in there, and realizing they're trying to pay attention to each group?

I've had bad service a few times, and made it a point to not tip...hell, once, I gave em a ripped dollar bill just to re-enforce how horrid it was. But more often than not, I hear folks trying their hardest to be cheap...especially young folks and college kids.

If you pay your employees well and treat them well, they will perform better in their work.

Look at Chickfila. No tipping is required to get Chickfila employees to be extra polite and provide great service. Compare them to other fast food restaurants and you'll see the main difference is in wages. Chickfila pays their workers substantially more than McDonald's, Taco Bell, etc

High end retail stores provide exceptional service without the expectation of tips. How do you think they pull it off?

Almost no other industry in our economy requires the customer to evaluate the service they received afterwards and decide how much to pay the employees. But still there exists differences in the quality of service provided by employees in the businesses. How could this be?

to bring the Bistro burger to my table the waitress gets $40 (that's 20%)

If waitstaff had fair wages in the first place this whole conversation wouldnt be such a button pusher. Paying someone $4 an hour is kind of cray. But they you have to think of small juke joint type bars/lounges that cant pay someone $10/hr. But agreed, there has to be a better way.

from my experience

they would actually tip me the difference

he could still tip the waiter/ress on whatever his bill was before the comp

and as the bartender, I would get tipped from the server based on the alcohol sales

i.e., if the entire bill was comped, I would have actually lost money

I'm not saying that's what happened

but it's an example of why an entire bill wouldn't be comped

to reiterate

usually, when something is comped on a bill out of good will

that usually translates to a larger tip for the server

if the entire bill was comped, tipping 0 would be foul

you follow

managers love to comp bills for celebrities

in the hopes that they become a returning customer

it gives their establishment profile

i.e. Who gets tipped? How much of the tip does this person/that person get? If such and such happens, who gets tipped? Who doesn't?

All of this exemplifies how stupid and unnecessary tipping is.
I as the customer have no business deciding how much a business's employees get paid. That's should just be a negotiation between the restaurant and the waiter.

$120 for 75 mins worth of work

If you talk to folks who've worked at high end restaurants, it's never easy to just walk in and start working there. For women, these places are even more into having "attractive" servers, even more so than at a Fridays, where they usually still have cute/good looking ones. And you have to be even more precise when dealing with folks who are paying $100+ for their meal vs the usually $12 at a sports bar...regardless of the amount of physical work done.
