if its a sushi chef doing this I would bet it doesnt take that much longer than making a normal roll. Form the rice into a shoe shape. Then cut the fish as needed.

seems like she just has an issue with people touching her food. She said she cant do Coldstone because of how much they handle the ice cream. They never use their hands.
