I was adding onions bay leaves garlic carrots broccoli oregano thyme. Potatoes and some mo shit all at the beginning. Knowing them bones need to cook for like 48 hours. I learnt today tho. adding potatoes to a stock is pretty useless. Potatoes absorb and dont add flavor. I never use broccoli when making a stock or broth either because it has such a strong flavor it will over power everything else. I would go with onions, carrots, celery, and maybe leeks. Also dont forget to brown everything. That includes the bones. Put the bones in the oven on high heat and maybe brush a little bit of tomato paste on them and let them brown. Then throw it all in the pot and let it go for a few hours.
