Help me out, gimme some titles. Either your go-to, tried-and-true, most-trusted book(s), or the ones you just feel better knowing they're there on your shelf.
I've put together a pretty decent collection during my adulthood, here's a few of my favorites so far:

online almost immediately. Nothing is really new or exciting and the recipes are too dairy, cheese, cream heavy for my tastes and the typography (hand lettering) is maddening. This is re: the first one. Maybe the others are better.

I can't cook for shit, and I eat frozen pizza like 3 times a week. I want to up my food game but a lot of cookbooks I've tried are still a bit over my head. Any recommendations for something geared towards total beginners that still has interesting recipes?
pretty much tells you how to make everything, doesn't it? i don't cook like that, but my brother does and i'm pretty sure he references this one quite a bit.
Mexican Everyday has many, quick (less than 30 minutes), healthy dishes that once you learn are easy to remember and can be applied to different situations. He also provides many different riffs so with one recipe you can make many different dishes. THe only negative is that the binding on these are terrible as I am on my 2nd book because the first one fell apart. I've heard the same complaint from others that have the book.
some of the best techniques and recipes you'll ever want to read, and explained so you understand and can apply what you learn to whatever you cook. Some of the brines and rubs I still use regularly

Superhuge fan of Minimalist Baker these days. They do not have physical copies of their 31 Days cookbook, only digital: https://minimalistbaker.com/31-meals/
