"Vegetarians: meat/protein substitutes"


  

          

Lets share recipes for meat/ protein substitutes

i just recently bought some gluten flour and definitely looking forward to making my own seitan

im gonna be using the below recipe, but if you have any tips etc, let me know

also, what are your other meat substitutes (other than tofu i.e).
i eat a lot of grains- and its exciting to discover different types and kinds
if you have any interesting grains- share these as well
i just bought some moong beans - havent eaten this in ages- used to eat this often as a kid
and fava beans - a bit hard to get in the store, but i eat fava beans daily when in south sudan )


anyway : seitan

2 cups vital wheat gluten
½ cup nutritional yeast
2 tsp. garlic powder
5 cups vegetable broth, divided
2 Tbs. soy sauce
½ small onion, diced
1 clove garlic, crushed

1. Combine wheat gluten, yeast, and garlic powder in large bowl. Stir in 1 cup broth and soy sauce until dough forms, adding more broth if necessary. Knead dough in bowl with spoon 3 minutes, or until elastic. Shape into 2 loaves.

2. Place loaves in large saucepan, and add remaining 4 cups broth, onion, garlic, and enough water to cover seitan. Cover, and bring to a boil over medium heat. Reduce heat to medium-low, and simmer 30 to 45 minutes, or until seitan is firm. Remove from heat, and cool in broth.

i eat fish though so i really want to try that.

seitan is great,
i still havent made it, plan to do so this week
iwant to be able to make my own 'sausage etc substitutes.
i tend to like my food spicy

some of these look pretty good.

btw, the seitan recipe above... good, but still not spicy enough for me
so i need to play around with different spices
but, kept the seitan frozen in the freezer and used a batch at a time
when i needed to cook
