Any of the categories that are tied to interests or personal info like that are from user-apecified data- like profile info or page likes.

There are demographic targets available that are based on third party data providers, which include likely purchase behavior, workplace industries, and net worth. THOSE are matched through the algorithm. What propublica found was not.
