Can a company resend an offer if they assumed you finished your degree even if the position doesn't require one?

I just went back to finally finish my degree but recently got a great job offer. Education never came up during the entire interview process....I'm afraid to tender my notice with my current employer even though it's been over a week since I received the offer.
