Many folks don't carry cash like that anymore and don't really care how the bartenders are actually getting paid. Hell, I think people mostly tip out of obligation anyway.
Tipping well at an open bar is definitely the move if you really do wanna fucked up. I dropped a $20 in the jar at a Xmas party once and dude poured me half the bottle over the course of the night.
