only been once for a wedding, so locals will definitely know more than I.

-get some charbroiled oysters. Drago's is the spot (right near the harrah's) according to my friend who goes twice a year (she was the one who got married). I got them at a festival stand. unreal.

-I second Mad's rec of cochon. The chef behind Cochon is also behind Herbsaint, if you want a more upscale option. He also has a bougie/hipster-y spot around the corner from cochon with great (expensive) sandwiches. that muffaletta was the truth.

-DBA and frenchman's is definitely the way to go.

-find out if there's ANY outdoor festival going on for things to do during the day. The tours and walking around were cool and all, but the festival we happened upon was good music and 20 phenomenal food stands in a cool park in midtown.

basically, befriend a local and get some off the beaten path recs. it doesn't go wrong.

also, we did a tour of the local rum distlillery. the rum wasn't very good (they kinda cheat in the process. for a liquor snob, it was disappointing). but they made a rum + ginger + cayenee carbonated drink that was amazing.

get frozen drinks from the sketchiest place you can find with 10-20 different flavors. take in a taxi. repeat frequently.
