If you're in the albums view, right click on the name of the album (not the tracks) and choose "View Info". You can then change the album artist back. May need to check the sorting tab as well.

also, iTunes tagged MJ's Thriller re-release as a 'Various Artists' album b/c of the interview tracks w/Quincy Jones. i had a hard time finding it in Artist view until i realized what was up and corrected the tag.
