It's a bit of a hassle because you can't pull horses out of the stable, and I've had at least two occurrences where gunplay or wild animals have scared a side horse so bad it completely disappeared along with its cargo... but if you get run up on by a rival gang or come across some wild horses, it's smart to stop and take the time to recruit those horses and brush/feed/ride them to level 1 or 2 bondage which doesn't take much time at all. I routinely go hunting with my main horse and two side horses which is super rad when you're focused on the bigger game like bears, elks, gators or cougars. It also obviously means that 16 pelt limit expands to 48 pelts, which is a lot of pelts.

The extra horses don't abandon you on a whim, though, and maybe it was just kind of a glitch, but I try to make a point of leaving them at camp when I don't need them just in case something in the game's code is trying to get rid of them. The third horse usually doesn't show up on your map with a horse icon like the first secondary does, so I'm not sure the game was designed with multiple horses in mind. I haven't had the patience to try having four horses, partially because...

The only problem with this approach is you can sometimes get extremely greedy and get caught out there hunting "just one more" only to have your carcasses start going bad. Part of the reason I'm glad carcasses are way less important than pelts in this game.
